Happy Hump Day!
This past weekend was my Hubs' Dirty Thirty Birthday outing at the bowling alley right down the street from our home.  We had so much fun with friends and had an after party at our house afterwards (of course my little lady was sleeping over at Grandma's!)  Steve had so much fun, we're so lucky to have such fun loving friends and family.

I'm part of a Bzz campaign with Morning Star Farms!
I looked through some recipes on their site and stumbled upon the Southwest Skillet.
Sounded pretty good, so I went and picked up a pack of the MSF Chick Patties.
I'm not sure why I didn't like it too much (I think it may have been because black beans are part of the recipe, ICK!) but the Hubs loved it... and that's all that matter right??
Here is the simple recipe, go try it out!



The Ingredient List:

○ 1/2 cup uncooked orzo pasta
○ 1 can (15 oz) black beans, rinsed and drained
○ 1 cup frozen whole kernel corn
○ 1 cup thick and chunky salsa
○ 2 1/2 cups water
○ 1/4 teaspoon hot pepper sauce
○ 2 tablespoons chopped cilantro
○ 1 package Morning Star Farms Chick Patties Original











What To Do?

○ Combine all the ingredients (except for the Chick patties and cilantro) into a 12-inch fry pan.  Cook over medium heat, stirring frequently, until mixture starts to boil.  Reduce heat, cover and let simmer for 20 minutes or until pasta is tender.

○ Stir in Chick patties and cilantro (I forgot to buy the cilantro, but the dish can go on without it.) Continue heating for 5 minutes longer or until patties are hot.  SERVE!










Prep Time: 5 minutes
Total Time: 30 minutes
Servings: 6

YAY for Monday (said by nobody ever but me!)
It's my first time linking up with Book Journey.  I've been slacking a little on my reading lately so I'm hoping this link up will give me more motivation to attack the books on my Kindle Fire.

I took a break with the romance genre lately and read the Matched trilogy.  Actually, I couldn't get through the last book so I kind of just stopped.  Hopefully I can get back into it later on.





I just started reading Seducing Cinderella by Gina Maxwell thanks to my sister's recommendation!
As soon as I'm done, I'll post up my review.

Happy Birthday to my best friend, my Husband!

Looking forward to many more years of celebrating.  


I didn't get him anything for his Birthday.  That's right.  Bad wifey!
No... he really wants to buy a gun (I don't know anything about them, but would love to learn how to shoot one!)  There's a gun show coming up in our area in April so we agreed that he'll get his present then.  His parent's threw him a party last Sunday.  We're going out to dinner tonight and I've set up a bowling party this upcoming Saturday night with our friends.

Parmesan Crusted Tilapia

Ever since the Chicken Tamale Bake I made a couple weeks ago, I've been so psyched about Pinning new recipes for me to create at home.  I've come up with a goal to try out something new each week.
I found the Parmesan Crusted Tilapia from Food.com and the instructions looked pretty easy!








The Ingredient List:

○ 3-4 tilapia fillets, depending on size (I used three though they were kind of small, I could have used four)

○ 1/4 cup bread crumbs

○ 1/4 cup grated parmesan cheese

○ 1 tablespoon Italian seasoning

○ 1 teaspoon garlic powder

○ 1 tablespoon lemon juice 

○ salt

○ pepper

○ olive oil











What To Do?

○ Thaw and wash tilapia fillets if frozen; pat dry with paper towels.

○ On a plate, combine bread crumbs, parmesan cheese, Italian seasoning and garlic powder.  Mix well.

○ On a separate plate, pour 1 tablespoon lemon juice.

○ Place fillet on the plate in the lemon juice and add kosher salt.  Just a reminder:  Don't use too much because of the salt that is already in the other seasonings (crumbs, Italian seasoning, garlic powder.)  Turn over on other side to coat with lemon juice and add more salt if desired.

○ Dredge fillet into the mixture of seasonings and pat to coat.

○ Place in an oiled baking dish and repeat with the other fillets.

○ Sprinkle a little lemon juice and olive oil over top of the fillets that are all now in the baking dish.

○ Bake fillets at 425°F for about 20 minutes or until the edges are browning.












They turned out spectacular!
How do I know?
The Hubs said: "I can eat this everyday."
... and he doesn't like to eat fish much.

DIY: Sharpie Mug

For Valentine's Day, I gave Steve a mug filled with candy.
I found the DIY Sharpie Mug on Pinterest of course!  
Since I'm not very crafty, this simple/easy project was right up my alley.  He still thought it was creative!






The great thing about this gift is...  It's cheap.
All you need is:
 ○ A white mug (I couldn't find one at the Dollar Tree so I got it from Wal Mart.)

○ Sharpie's



○ And whatever his or her favorite candy's are.


I wrote a quote at the top: "You're the best thing I never knew I needed."
Then wrote things I love about him all around the mug.















After I finished, I stuck the mug on a baking sheet and baked it on 350 for about 30 minutes.
Supposedly baking it helps if you choose to put it in the dishwasher.  


Once cooled off, you can fill it with whatever gifts you have in mind.
It's unique and heartfelt.
You can use this idea for any Holiday really not just V-Day.

Happy three-day weekend to all you normal job working people!
I'm happy the weekend is over because that means we're getting closer to my Hub's 30th birthday.
Oh, and I have off work this upcoming Saturday for the festivities.  YAY!

Sunday (on Monday) Social- Valentine's Edition

Sunday Social
My weekend was full of work (the usual.)  Though I did get to spend some time with my mom and sis which is rare since our schedules are different... most people's schedules are different than mine!
This week's questions were based off Valentine's Day.
Lets get to the VD questions:
1. Best Valentines Day you’ve ever had: 
Honestly, I've never gone all out for V-Day... In the last 10 years that I've been working in the restaurant business, I think I've worked on every single one.  Which kinda blows!
2. Worst Valentines Day you’ve ever had: 
I can't really compare.  I've never had a terrible one.
3. What did you do for Valentines this year?
Since I had to work in the evening, the Hubs took me out to lunch at Copper Canyon Grill.  We both had never been so it was a good experience for us.  He was wonderful!  I got roses that he pre-ordered from Whole Foods and a super cute card:




If you're wondering where my daughter was during our date... she was at school participating in her first ever Valentine's Day class party.  Supposedly, it was a blast and she made out good!


Since guys are so hard to shop for on such a *silly* (as they call it) Holiday, I DIY'd a coffee mug and filled it with Gummy Bears and gum.  Since he's been eating much healthier and working out a ton lately, I didn't want to fill it with tons of candy.


4. Best Valentines Idea if you’re single:
Bottle of wine and a chick flick with another single girlfriend!

5. Favorite Valentines Candy?
Chocolate covered strawberries!

6. Favorite Valentines Memory from your childhood: 
On each Valentine's day, my mom would give me a goody bag before leaving for school.  I always looked forward to it!  When I was a teenager, I still looked forward to it... knowing that if none of my friends got me anything, I could always count on my Momma.  ☺
